Lab moo (Spicy minced pork cooked northern style)is popular to eat on special occasions or parties or festivals. Minced pork is the main component,mixed with fresh blood, boiled entrails in slices and flovored with spices and including with rosted dry chillis.Eat with fresh Vegetables and The types of herbs that have a strong fragrance, for examble : Vieatnamese coriander or scientific name is Polygonum odoratum..In thai name: Pak paew,it adds an aromatic heat reminiscent of mint, coriander but much stronger and hotter with a hint of lemon.

The biggest and most colorful festival of the year in Thailand is Loy Kratong or Yi Peng, as it is known in Chiang Mai and the north. It is held on the night of the full moon of the twelfth lunar month and usually falls in November.
At this time of year the tide in most rivers is highest and the moon is brightest, creating a romantic ideal setting - especially for lovers. The Thai people see it as the best time for celebration on such a beautiful night. Chiang Mai is one of the prime sites to celebrate the Loy Kratong festival. During the celebration, the largest Kratongs are decorated floats and carried on trucks in procession. The colorfully lit floats form a long glittering parade as they make their ways to the Ping River. Meanwhile, up above thousands of 'khom loy' (floating lanterns) drift into the night sky. These large balloon-like lanterns are released at temples and sometimes from private homes in the hope that misfortune flies away with them.
Loy Kratong is probably the most picturesque and most beautiful of Thai celebrations. 'Loy' literally means 'to float' and 'Kratong' refers to the lotus-shape vessel that can float on water. Originally, the kratong was made of banana leaves or the layers of the trunk of a banana tree or a spider lily plant. A kratong contains food, betel nuts, flowers, joss sticks, candle and coins. The making of a kratong is much more creative these days as many more materials have been applied in making a kratong.
One needs only to light the candles and the joss sticks, make one's wishes and let it float away with the current of a river or a canal. With Kratong in hands, they light the candle, put some coins in the kratong and silently make a wish and finally carefully place their kratongs in the water and release them to the current. They watch intently as the float drifts silently downstream, hoping that the candle will not go out. Its flame is said to signify longevity, fulfillment of wishes and release from sins. Altogether it is considered a romantic night for couples and lovers, many of them would make a wish to bless their love affairs as they float their Kratong on the river.

Cooking class on Songklan festival.
Songkran, a national celebration of the traditional Thai New Year, This takes place all over Thailand in mid-April. The date on 13-15 April every year.In the morning people go to temple to make merite by offering food to monks and novicec opserving the precepts five of eight precepts and listening to the Drama talk.In the afternoon they perform the bathing ceremony of the Buddha images and monks and novices who live in the temple. During this time the younger people ask blessing from the elders. This is knows as splashing feats.It might be said the Songklan fastival is the Respected festival to the elders or family day.
Thai people to have fun, traditional music, dance, games, and other activities in the pastime.We have showed all this to our customer that day..
Brilliant day out in the countryside”
The day started with everyone being picked up at their guesthouses (total of 9 in the group) and taken to Chiang Mai train station where we took the train to a lovely old train station in Lamphun province, 20 mins outside of Chiang Mai. Old school dutch style bikes awaited us so we could cycle 15 mins to the cooking school, stopping by a shallot, chilli and garlic packing depot to have a look around.
The cooking school is at a lovely old house – we cook outside in a pretty shaded area and each person gets their own station. we have an organic garden where you pick all your own herbs, limes and papaya that will be used in your recipes – loads of fun and highly educational.
We got to do some more cycling (with our Thai farmer hats on) after dropping off our bags and picking our herbs - around the farmlands to pick some kale and see how everything is grown. Then we cooked and cooked and cooked (everyone chooses from the selection what they would like to cook) in sets of two courses at a time, with lots of eating in between!And at the end of the day we all piled into the back of a Songthaew and were driven back to the guesthouses, stopping for a beer (or coke) for the road. We were so full we only managed to share banana roti for dinner (you have to try these in Chiang Mai - delicious!)
