Lab moo (Spicy minced pork cooked northern style)is popular to eat on special occasions or parties or festivals. Minced pork is the main component,mixed with fresh blood, boiled entrails in slices and flovored with spices and including with rosted dry chillis.Eat with fresh Vegetables and The types of herbs that have a strong fragrance, for examble : Vieatnamese coriander or scientific name is Polygonum odoratum..In thai name: Pak paew,it adds an aromatic heat reminiscent of mint, coriander but much stronger and hotter with a hint of lemon.
Especially this recipe is from my mother and traditional from Uttaradit province.
